Slumber Party Recipes: Healthy Meal on the Fly for Mom’s Sleepover

My mom tells me she is coming over and really I knew this already because I was helping her study for her exam, but I had no usable ingredients to cook dinner. At the last minute I ran over to Aldi, which by the way has an amazing selection.

They now have wine (none of them I like – I prefer sweet), toiletries, kitchen and home goods, all at great prices. I usually shop at Jewel-Osco and boy each time I’m at the register in the checkout line – it’s complete utter shock as to why my grocery bill is so high. And Target isn’t any better – you go there thinking the few items you have won’t cost much but for some reason with me, at least I’m never happy with my bill there either.

Anyway – I quickly cooked corn on the cob with a side of carrots and mashed potatoes sprinkled with basil leaves. The main dish was a half of salmon topped with tomatoes, spinach, mushrooms and avocado. I normally cook with these 3 main ingredients: tomatoes, spinach and avocado. Because for me it reduces my chances of being full and makes it a lighter dish with anything I eat. It was very yummy. I don’t normally cook a dish with carrots. But for my mom this dish came to mind. If I had been with someone else it would have been a different meal altogether :-).
